Blueberry Banana Oat Muffins


INGREDIENTS:

4 Tbsp. coconut oil
1 cup Splenda OR 1/2 cup Stevia in the Raw
1/8 cup organic honey
2 eggs
2 1/2 cups oat flour
1 tsp. salt
1 tsp. baking soda
1/8 tsp. cinnamon
3/4 cup almond milk
1 1/2 tsp. vanilla
1 pt. fresh blueberries
1 banana

DIRECTIONS:

1. cream the coconut oil, Stevia, and honey
2. add eggs; mix
3. now add oat flour, baking powder, salt, and cinnamon
4. next add almond milk, blueberries, and smashed bananas
5. mix all together and spoon into muffin tin
6. bake at 425* for 20-22 minutes.
